Ingredients

  • 2 soft tortilla wraps
  • 2 crispy chicken fillets homemade, frozen, or from leftovers
  • 2 large handfuls romaine or cos lettuce shredded
  • 2 –3 tbsp Caesar dressing
  • Freshly grated Parmesan or shavings
  • Salt and freshly ground black pepper to taste
  • Optional: lemon wedges crispy bacon bits

Instructions

  • Cook your crispy chicken fillets according to the packet or your preferred method, until golden and piping hot. Let rest for a couple of minutes, then slice into strips. A sharp knife like this makes it easy to slice the chicken cleanly and halve the wrap without squashing it.
  • Warm the tortilla wraps in a dry pan or microwave for 10–15 seconds until soft and pliable. A tortilla warmer like this keeps wraps soft and warm without drying them out.
  • Lay the wraps out flat. Add a generous layer of shredded lettuce, a few chicken strips, a drizzle of Caesar dressing, and a scattering of Parmesan.
  • Season with a little black pepper and any extras you fancy (like bacon or a squeeze of lemon).
  • Roll up tightly, tucking in the ends as you go, then slice in half on the diagonal. Serve immediately. Wrap in parchment like this if you’re taking these to work or on the go—, it keeps everything snug and tidy.
