Ingredients

  • 200 g beef mince
  • 1 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp chilli powder or to taste
  • 1 garlic clove minced
  • 150 g cooked white or brown rice
  • 100 g canned black beans rinsed and drained
  • 1 small tomato diced
  • ¼ red onion finely sliced
  • 40 g grated cheddar
  • 1 small avocado sliced
  • 1 handful shredded lettuce
  • Lime wedges to serve
  • Salt and black pepper to taste

Instructions

  • Heat a non-stick frying pan over medium heat and add olive oil. Add the beef mince and cook for 4–5 minutes, breaking it up with a spatula until browned.
  • Stir in the garlic, cumin, smoked paprika, and chilli powder. Let the spices cook into the meat for 2–3 minutes to bring out their full flavour. Season with salt and black pepper to taste.
  • While the beef cooks, prep your toppings using a sharp chef’s knife like this – slice the avocado and red onion, dice the tomato, and shred the lettuce.
  • Warm the rice and black beans in a microwave or small saucepan if preferred. Use a mixing bowl to combine them before serving.
  • To assemble, grab a wide serving bowl and add a generous layer of rice and beans. Top with the spiced beef, then layer on your toppings – lettuce, tomato, red onion, sliced avocado, and cheese grated with something like this grater.
  • Finish with a squeeze of lime and serve immediately.
