Ingredients

  • 150 g fresh raspberries
  • 100 ml fresh lemon juice about 2–3 lemons
  • 2 tbsp sugar adjust to taste
  • 500 ml sparkling water or still, if preferred
  • Ice to serve
  • Lemon slices and extra raspberries to garnish

Instructions

  • Add the raspberries, lemon juice, and sugar to a jug or bowl. Use a muddler or the back of a spoon to mash everything together until the berries are broken down and the sugar has mostly dissolved.
  • Strain the mixture through a fine sieve into a clean jug to remove the seeds and pulp, pressing down to extract as much juice as possible.
  • Top up with the sparkling water and stir gently to combine.
  • Fill glasses with ice and pour over the raspberry lemonade. Garnish with lemon slices and a few whole raspberries.
  • Serve immediately while chilled and fizzy.
