A refreshing homemade raspberry lemonade with fresh lemon juice, muddled raspberries and a fizzy sparkling finish – perfect for summer.

Ingredients
150gfresh raspberries
100mlfresh lemon juiceabout 2–3 lemons
2tbsp sugaradjust to taste
500mlsparkling wateror still, if preferred

Instructions
Add the raspberries, lemon juice, and sugar to a jug or bowl. Use a muddler or the back of a spoon to mash everything together until the berries are broken down and the sugar has mostly dissolved.
Strain the mixture through a fine sieve into a clean jug to remove the seeds and pulp, pressing down to extract as much juice as possible.
Top up with the sparkling water and stir gently to combine.
Fill glasses with ice and pour over the raspberry lemonade. Garnish with lemon slices and a few whole raspberries.
